You know I love a good breakfast meal prep that will make mornings easier all week long. Every Sunday I try to AT LEAST prep a breakfast for the week and I’m always so glad that I did. That being said, this week I rounded up five simple breakfast ideas to save yourself some time this week—pick one or two below to prep today!

banana bread overnight oats
When you’re looking for a quick and nourishing breakfast idea that isn’t eggs, try these banana bread overnight oats! You can prep everything in less than five minutes and have a satisfying breakfast ready for you to grab on your way out the door. If you’re looking for a way to store your prepped oats, I love these glass containers.
Ingredients (for 1 serving):
½ ripe banana, mashed
½ cup gluten-free oats
2 tbsp chia seeds
1 tbsp hemp seeds
1 cup almond milk
1 tsp vanilla extract
1 tbsp pure maple syrup

sheet pan spinach & feta breakfast sandwiches
These easy, freezer-friendly sheet pan spinach and feta breakfast sandwiches are perfect for quickly reheating on your way out the door in the morning. After prepping, wrap in foil and freeze until you’re ready to enjoy. Reheat these in the microwave, air fryer, or oven!
Ingredients (for 8 servings):
8 eggs
2/3 cup milk of choice
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
2 cups spinach, finely chopped
3/4 cup feta crumbles
8 english muffins (use gluten-free as needed)

roasted red pepper & goat cheese breakfast biscuits
These high-protein breakfast biscuits have become one of my most popular recipes so I keep testing out new flavors! The recipe makes 12 biscuits that you bake in the oven, and can store in the refrigerator and just reheat when you’re ready! I’ve found 2-3 minutes in the airfryer is perfect for reheating, but a microwave or oven works too.
Ingredients (for 12 biscuits):
1 tbsp avocado or olive oil
1 small yellow onion, diced
16oz ground pork (can sub chicken sausage, ground turkey, or ground chicken)
6 eggs, beaten
1 cup cup shredded cheddar cheese
1 cup chopped roasted red peppers
1 + 1/2 cups almond flour
1/2 cup coconut flour
1 tsp kosher salt
1/2 tsp ground black pepper
2 tsp oregano
1 tsp garlic powder
2 tsp baking powder
4oz goat cheese

sun-dried tomato, feta, & basil egg muffins
These egg muffins have a similar texture to the Starbucks egg bites, which I love, because you blend up your eggs with cottage cheese, and they’re a great low carb option if you’re looking for that. You could definitely personalize these to be any flavor you’d like!
Ingredients (for 12-15 egg bites):
8 eggs
1 1/2 cups 4% cottage cheese
1/2 tsp kosher salt
1/2 tsp ground black pepper
1/2 tsp garlic powder
1 cup chopped sun-dried tomatoes
1 cup finely chopped basil leaves
1 cup crumbled feta cheese

If you’re looking for a quick breakfast option that will make your mornings easier and sweeter, these double chocolate protein muffins are made for you. They’re also dairy and gluten free — bonus points, you only need one bowl!!
Ingredients (for 12 muffins)
2 eggs, beaten
1 1/2 cups unsweetened applesauce
1 cup unsweetened almond milk
1/4 cup pure maple syrup
3/4 cup oat flour
1/2 cup cacao powder
1 cup protein powder (I used Ritual’s vegan protein powder)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt
1 cup dairy-free chocolate chips, divided, (I used Hu Kitchen gems)
