High-protein spinach and cheese egg muffins
These spinach & cheese egg muffins have a similar texture to the Starbucks egg bites, which I do love, because you blend up your eggs with cottage cheese, and they’re a great low carb option if you’re looking for that. You could definitely personalize these to be any flavor you’d like, but the spinach and cheese are always a hit in my house!
Green veggie lemony orzo salad
With spring finally here, I’m leaning heavily into bright citrusy flavors while still trying to get in as many veggies as I possibly can. This recipe is delicious and will certainly be a crowd-pleaser at family holidays and barbeques this spring and summer. I know I’ve posted about this a lot, but that’s just because I’ve been making it on repeat!
Gluten-free breaded chicken
This crispy and delicious gluten-free, breaded chicken is the closest to real fried chicken I’ve had. It’s delicious as a topping on a salad, in a gluten-free chicken parm, or on its own. Give this breaded chicken a try, and even if you’re gluten-free, you’ll forget that there’s no gluten in this recipe.
Chocolate raspberry protein balls
These chocolate raspberry protein balls are the perfect pre or post-workout snack. The salty and savory almond butter combines perfectly with the tang of the raspberries and the sweetness of the chocolate. These will feel like you’re eating a dessert, but you’ll really be getting in an extra bit of protein.
One pan orange ginger halibut with mango salsa
My favorite dinner this week was this one pan orange ginger halibut with mango salsa. This recipe brought a little bit of sunshine into my kitchen, with a variety of fruits and veggies in every bite. I think you’re going to want to add it to your weekly dinner rotation after you try it. And I recommend making this as soon as possible to usher in the spring vibes because I’m done with winter!
Sheet pan spiced chicken & carrots with lemon yogurt sauce
You all know I love a sheet pan meal, but I never want to sacrifice flavor in the name of ease! This sheet pan meal has the best of both worlds with delicious and bright flavors AND a quick prep time. Save this sheet pan spiced chicken and carrots recipe for a busy day and you’ll be shocked by how easy and tasty it is! Plus, you can’t beat that yogurt sauce.
Vanilla protein pancakes
I love pancakes. Growing up, when my family would go out to breakfast I would always order the pancakes. But lately, I’ve had a hard time eating pancakes for breakfast because they just don’t make me feel that great. I get hungry soon after I finish and crash before lunch. Enter these vanilla protein pancakes! The protein packed in these pancakes helps this breakfast treat keep me full until lunch!
