When I first started meal prepping, chia pudding quickly became a weekly staple for a grab-and-go breakfast option. Whenever I’m developing new breakfast prep recipes, I like to keep timing and accessibility top of mind, so no matter what my morning looks like, I know I have an easy, yummy, and nutritious breakfast option—and I know you all want the same! Chia pudding takes just five minutes to prep and requires no ovens or microwaves (you know I’m on my no-oven kick right now).
Not only is it super easy to prep, but chia seeds are loaded with nutrients like Omega-3, which supports brain function and cardiovascular health, as well as fiber to help keep you full. What I love most about chia pudding, though, is the endless possibilities for flavor combinations and toppings—I love to change out my flavors seasonally to spice things up!
That being said, this week I’m sharing three of my favorite ways to prepare breakfast chia puddings. Save yourself some time this week and pick one below to prep!
KEY LIME CHIA PUDDING
You guys have gone CRAZY for this one!! This key lime chia pudding has been such a crowd favorite since it was featured in my weekly meal prep, I’m ready to crown it the chia pudding of the summer!! I know so many of you are loving it simply because of the stunning color from the matcha powder and lime zest—it just screams SUMMER—but I promise it truly does taste as good (or better) as it looks! This recipe makes one jar, feel free to multiply ingredients to prep more for the week, or if you’re having a brunch party! This one also requires no protein powder.
Ingredients (for 1 serving):
3 tbsp chia seeds
1/4 tsp matcha powder (optional, for color)
pinch salt
1/2 lime (juice + zest)
1/2 cup almond milk
1/2 cup greek yogurt (sub DF yogurt for dairy-free)
1 tbsp maple syrup

STRAWBERRIES & CREAM CHIA PUDDING
I don’t need to dive into my strawberry fixation again, you already know it’s still going strong🍓. While peak strawb season may be behind us, there’s no stopping the fruit train all summer long. If you’re just as obsessed as I am, try out this strawberries & cream recipe! The sweet and slightly tart flavors from the strawberries balance out with the creamy yogurt topping — I guarantee you will want to savor every bite of this one. Everything gets mixed in a blender for easy cleanup too!
Ingredients (for 4 servings)
1 +1/2 cups fresh strawberries (or frozen defrosted) + additional for topping, if desired
2 +1/4 cups almond milk
1 tsp vanilla extract
1 –2 tsp maple syrup (depending on preference)
2 scoops (50-60g) vanilla protein powder
10 tbsp chia seeds (2.5 tbsp each serving)
yogurt of choice, for topping

CHOCOLATE BANANA BREAD CHIA PUDDING
I’m not sure I need to convince you to try this one, the key ingredients—chocolate & banana—speak for themself. They will forever be a top tier combination, and this chia pudding brings them together beautifully. The lines between breakfast and dessert are definitely blurred here, but in the best way possible. So if you’re looking to get your chocolate fix in, with the added bonus of extra fiber, try this one out! I recommend topping with a drizzle of almond butter and a shake of cinnamon for the full “banana bread” experience.
Ingredients (for 4 servings):
1 large or two small ripe bananas
2 cups unsweetened almond milk
3 tbsp cacao powder
1.5 tsp cinnamon
1 tsp vanilla extract
2 tbsp maple syrup
1/2 tsp salt
1/2 cup chia seeds
optional: 3 tbsp almond butter
