I’m getting ready to do a couple hours of meal prep today and thinking back to when I first started a meal prep routine back in college. That was about five years ago and I was just beginning to explore the world of health and wellness—I didn’t know a lot about healthy cooking but I did figure I could start meal prepping something nourishing just by preparing my breakfast for the week each Sunday.
So, before heading out to finish last-minute assignments I would mix up some eggs with whatever veggies and proteins I had in the freezer, pour it into a baking dish, and make a big egg bake for the week. That routine ultimately transformed into what is now one of my favorite things—my Sunday meal prep ritual that I share with you all.
Since it all started with breakfast meal prep, my number one recommendation to people just getting started is to begin by making breakfasts for the week. They’re typically quick to put together and make mornings SO much easier. It’s the biggest gift you can give yourself! double chocolate protein muffins
If you’re looking for a quick breakfast option that will make your mornings easier and sweeter, these double chocolate protein muffins are made for you. Just mix everything together in one mixing bowl, bake in a muffin tin, and about 25 minutes later you have a batch of delicious and fudgey chocolate muffins that are packed with protein. They’re also dairy and gluten free!

For me, breakfast meal prep is essential. Some days I wake up in the morning and just want to eat whatever is easiest, so I knew I had to figure out a way to plan better for morning hunger. I started making these “egg bakes” years ago and have done it hundreds of times since. This sausage and kale egg bake is my latest favorite version and so easy for breakfast meal prep. You’ll start your day with a great source of protein and have a tasty meal.
