Today officially wrapped up my 10 Days of Fall Dinners series! If you missed a few along the way (or just want them all in one place to reference), this newsletter has every single recipe I shared in the series linked for you in one spot.
Over the last 10 days we cooked our way through cozy one-pot meals, hearty soups, comforting pastas, and easy sheet pan dinners—perfect for busy weeknights. Some of my favorite fall flavors made an appearance throughout the series: earthy rosemary and thyme, maple for a touch of sweetness, plenty of butternut squash (I’ll never get enough), and of course, pumpkin. I love using traditionally sweet ingredients in savory recipes—it’s such a fun surprise, and honestly, I think pumpkin shines best in soups and one-pot meals (controversial, I know). I had so much fun sharing my faves!

Butternut Squash Tortellini Soup with Mini Meatballs — If you read Sunday’s newsletter, I shared the full recipe plus notes and tips for best results & to make it easy. I love a tortellini soup in the fall, it’s so filling and works well for meal prep. The video for this one just went up today to round out the series!
Creamy Pumpkin Rigatoni with Rosemary Breadcrumbs — This was on repeat in my kitchen last fall. It’s creamy, sort of cheesy but in a non-cheesy way? It makes sense once you’ve tried it. One Pan Butternut Squash, Chicken, and Rice Bake — One of my specialities is developing not-boring ways to eat chicken & rice and this Butternut Squash, Chicken, and Rice Bake is no exception. It’s so flavorful and filling. The ingredients really do the talking thanks to some simple spices and herbs! A great go-to skillet for a one pan situation.
Maple Balsamic Pot Roast with Brown Butter Mashed Potatoes — Comfort food at its finest! This pot roast with brown butter mashed potatoes is rich, tender, and packed with cozy flavors. Slow-cooked chuck roast melts in a savory sauce of balsamic, maple, and herbs, while the buttery, golden mashed potatoes are pure magic. It’s the perfect hearty (gluten-free!) dinner to warm up any night. A great dutch oven for a pot roast, another lower cost option.
One Pot Warm Veggie Turkey Pasta — One-pot meals are one of my fave “hacks” for easy dinners—using only one pot to cook helps keep clean up time minimal, which means dinner on the table even sooner! This one is creamy, cozy, and uses three different veggies but it’s so forgiving, you can easily swap for whatever similar veg you have on hand! Be sure to read the notes on this one is you’re not using gluten-free pasta, as it impacts the cook time.
Slow Cooker Chicken Tortilla Soup — This slow cooker tortilla soup is the perfect easy meal because you simply dump your ingredients into the slow cooker and just 5-6 hours later, you have a delicious and nourishing meal ready to enjoy with your family (or plenty of amazing leftovers!). Also a staple for football season! Love this crockpot!
Creamy Dairy-free Mushroom and Wild Rice Soup — This is like fall in a pot! I look forward to making this Mushroom and Wild Rice soup every single year. Watch a full recipe tutorial here! These affordable soup bowls are perfect for that big bowl we’re all craving.
One-Pot Quinoa with Sweet Potato, Kale, and Chicken Sausage — The ideal mid-week dinner or meal prep! This recipe is full of creamy fall flavors, and is super easy to modify based on what you have in the fridge. Omit the goat cheese for a dairy-free option, or sub for a dairy-free soft cheese, I personally love the creaminess the cheese adds. This is the chicken sausage I always grab for and the pot I used!
Harvest Sheet Pan Gnocchi with Crispy Kale — Nothing beats a seasonal sheet pan meal. It’s all the flavors of the season in one here—squash, melty cheese, hearty greens. Shoutout to those who recommended having it for breakfast with an egg overtop, sounds like a delish way to use leftovers (if you have any). Also partly convinced this one got over 1 million views last fall because of this cute sheet pan and liner.
One-Pot Pumpkin Orzo with Spicy Sausage and Kale — This is a cozy, flavorful dinner that comes together with minimal dishes. Orzo is simmered with pumpkin puree, coconut milk, and savory spices, then combined with spicy Italian sausage, wilted kale, and garlic for a nutrient-packed meal. The result is a creamy risotto-like texture, I used this GF orzo!
