Happy Friday!! This weekend is already off to a great start because I’m listening to Taylor Swift’s new album on repeat and talking to you all about one of my favorite topics—ingredient prep! I wanted to switch things up this week, since I’ve been talking so much about meal prep lately, and show you an example of how you can utilize simple ingredient prep to get ahead on dinners (or lunches). If you want to follow along, I’ve included a grocery list for everything you’ll need!
All in, I spent $48.83 on the groceries (I had to restock almond butter, if you already have that it’s just $44.84) and spent less than 90 minutes on the prep!
Ingredient prep is always my go-to when I know I’m having a busy week, but still want to switch up my meals each day. I also heavily relied on ingredient prep when I began my journey eating healthier foods because it ensured I always had something nourishing made in the fridge, and depending on what I was craving I could adjust as needed. Using those same principles, I developed three GF/DF recipes to share with you this week. Each recipe makes four servings, and you decide whether you want to use the meals for work lunches, dinners for the fam, or whatever else you need!
Today’s newsletter will walk you through how to prepare these six components:
Bone broth quinoa
Sweet & spicy almond butter sauce
Two-minute pickled carrots
Ginger scallion chicken meatballs
Roasted tofu cubes
Ground beef taco meat
By the end, you’ll have ingredient prep done to enjoy four servings each of these three recipes:
Ginger scallion chicken meatball bowls with pickled carrots
