After a week of colder temps (and increasingly shorter days) here in Boston, I wanted to make this week’s meal plan focused on cozy and comforting meals that fit these chilly fall days. Basically, weeknight dinners that you’ll want to cozy up with on the couch but will still leave you feeling good afterwards. That means lots of hearty root veggies (butternut squash, beets, potatoes, carrots), balanced carb sources (like pasta, rice, and quinoa), and of course leaning on herbs and spices to pack in cozy fall flavors.

Fall recipes have always been my fave because of those comforting elements I just mentioned, but also because there really are so many opportunities to fit plants into the recipes. This week was the final week of my summer CSA (community supported agriculture) and seeing the last several weeks boxes stuffed with apples, squash, pumpkin, onions, fennel, and potatoes has been so exciting. I just love fall veg!!! 🍂

You’ll notice a few of our recipes this week utilize butternut squash—my tip is to prep your squash early in the week so you have it ready to go when it comes time for dinner! My favorite way to prep is to peel and dice into 1/2-inch cubes, and refrigerate in a sealed container (or Stasher bag). Or, of course, you can buy it pre-chopped!
