Meal prepping for the week in less than two hours sounds great. Having dinner ready to go for an easy week? Also great. But actually finding the motivation—or even knowing where to start based on how you’re feeling—can be the tricky part. We all have those little roadblocks that make meal prep and planning feel like a chore. Maybe you don’t have the time or energy to chop a million ingredients, or you’re trying to eat more veggies but aren’t sure how to incorporate them. Maybe you just want something comforting that still feels doable after a long day of decision making.

Today’s newsletter provides solutions to common “what ifs” related to meal prep with meal suggestions (breakfast, lunch, and dinner!) to take the guesswork out of what to start with. Because even when cooking feels like an uphill battle, I truly believe there’s always a way to make it easier, more enjoyable, and still delicious!!

This week’s newsletter answers these “what ifs”:

🔁 What if I want something easy to adapt?
🥦 What if I’m trying to eat more veggies?
🔪 What if I don’t want to chop? (trust me, I get it)
😌 What if I’m craving comfort food?

Keep scrolling for an ideas resource you can reference when you find yourself stuck on one of these roadblocks. And if your biggest roadblock is chopping fatigue (same!! it’s one of the hardest parts of eating so many veggies!!), this week’s meal plan is for you. Every dinner in this week’s plan requires two or fewer ingredients to chop so you can spend less time at the cutting board and more time actually enjoying your meals!! And because it’s low chop, the grocery list is super simple this week!
