This week’s recap
If you’re wondering why I won’t ever stop talking about meal prep, it’s because I seriously believe a little bit of weekly meal prep is one of the top things that changed my life when I began my health journey. I love how you can make it as simple or as complicated as you want it to be and tailor it to your specific preferences and cravings. Not only that, you can also experiment in the kitchen, gain culinary confidence, and get excited for the week knowing you have something nutritious and delicious waiting for you in the fridge.
That being said, I have one breakfast and one lunch idea to share with you for this week as we cruise into Sunday meal prep day!
BREAKFAST
Sausage, pepper, & onion egg bake
Whenever I need a reliable, quick breakfast meal prep for the week, I make a big egg bake with lots of eggs, veggies, and protein. This sausage, pepper, and onion egg bake is my latest version that I’ve been loving. It’s so easy to quickly reheat in the morning to ensure the day kicks off with a blood sugar friendly and protein packed breakfast. This recipe is also perfect for hosting! If you have a big group to cook for, mix this egg bake together and serve it up-it’s so much easier than making scrambled eggs or individual items for everyone.
LUNCH
Buffalo chicken bowls with roasted sweet potatoes & broccoli
When it comes to a bowl, I’m very particular about what I like. I need all different tastes and textures throughout, with various flavors and components that are unique but complement each other. These buffalo chicken bowls with roasted sweet potatoes and broccoli are, in my opinion, perfect bowls. The buffalo chicken is savory and slightly creamy, the sweet potatoes are crispy and salty, and the broccoli is cheesy (but still dairy-free) and hearty. Together, every bite is perfectly satisfying and you’ll want these bowls every single day! That’s why they’re perfect for meal prep.
DESSERT
Strawberry shortcake cake
While this isn’t necessarily a meal prep idea, this strawberry shortcake cake I shared this week is the perfect dessert for a summer day!! Summer desserts should be light, cool and a little colorful. This gluten-free strawberry shortcake hits on all three. It’s dairy-free, gluten-free, grain-free and refined sugar-free, but if you show up to a party with this one, the guests won’t even know it. This is one of those recipes that can be whipped together quickly and does not disappoint. It’s the perfect summer treat!
