While putting together this week’s grocery list and meal plan, I came to realize I describe a LOT of my recipes as “creamy ___” and I kind of love that. Part of it is definitely because I am coconut milk obsessed (like, I did a 30-minute interview this week all about why I love coconut milk obsessed…) and another part of it is because I feel passionate about making cozy meals that taste like comfort food but pack in lots of nutritious ingredients.
When I first started on my health journey I felt like eating well meant I was just going to suffer through my meals and never really experience amazing food anymore. Well, spoiler alert - I quickly found a few ways to be creative in the kitchen, slowly added more on, and ended up making my entire career revolve around creating “better for you” foods taste amazing. Because nutritious food really can taste SO good.
