This week’s recap
This week I did a new edition of my budget grocery series, and from the feedback I’ve received so far on the recipes, you and your families are loving them! I’ve done this series 10 times now and always get so excited to find new ways to create delicious recipes on a budget. This time, I took a $55 grocery haul and turned it into five different recipes that each made four servings (just $2.75 per serving!!)

The grocery list
Here’s everything on our list for the week of meals, which you can copy and paste right from here into your notes app or download a PDF to your phone or computer by clicking below. For this series, I shopped at Trader Joe’s, but you can grab the list anywhere!

Produce:
1 large shallot
1 garlic bulb
3 lemons
10oz bag shredded kale (about 10 cups total)
10.5oz little gem lettuce (can sub butter lettuce, romaine lettuce)
4oz basil bunch (about 3 + 1/2 packed cups total)
2.5oz cilantro bunch (about 1 cup, finely chopped, total)
1 green onion bunch (5-6 green onions total)
1oz fresh sage
1 lb carrots (about 6 large or 10 small)
1 cauliflower head
Meat/Other proteins:
1 lb ground chicken
1 lb ground beef (can sub ground turkey or chicken)
3 lbs bone-in, skin-on chicken thighs (can sub for boneless, skinless)
Canned and Packaged:
Two 15oz cans great northern, navy, or cannellini beans
1 lb green lentils
13.5oz can coconut milk
32oz chicken or veggie broth
32oz Basmati or Jasmine rice
16oz Gluten-free spaghetti (I used brown rice and quinoa GF spaghetti)
4oz nutritional yeast (can sub grated parmesan)
Pantry staples:
Olive oil
Sesame oil
Coconut aminos, tamari, or low-sodium soy sauce
Sriracha
Tahini, almond butter, or cashew butter (you will need 1/2 cup total)
Maple syrup
Spices:
Kosher salt & black pepper
Garlic powder
Ground ginger
Dried oregano
Ground sage
Dried thyme
Smoked paprika
Red pepper flakes (optional)
Sesame seeds (optional)

Recipe 1 — One-pan garlic and sage chicken thighs and rice
Recipe 2 — White bean, pesto, and lemon soup (note, pesto batch is used twice!)
Recipe 3 — Sautéed beef & lentil lettuce wraps
Recipe 4 — Kale pesto pasta with pesto chicken meatballs
Recipe 5 — Roasted cauliflower and lentil bowls with green tahini sauce

These recipes are all sooooooo good. The lettuce wraps and chicken thighs have been our family’s favorites, we’ve made them twice in less than 2 weeks!
