You all know I love finding ways to make healthy eating more budget-friendly, and I felt like this week’s new recipes provided some examples of that. And I’m not only a fan of budget-friendly recipes, but also ones that are quick to make (or meal prep) and made with simple ingredients!
Whether it’s a sheet pan meal, no-bake treat, slow cooker dump, or one pot recipe, I encourage you to pick an easy & budget-friendly meal to prep this week. I have tons of ideas for you!
I spent some time this week just reflecting on my why and the reason I’m so passionate about meal prepping — it really has changed my life and that’s why I can’t stop talking about it. Some of my most effective meal prep habits have included:
Spending 20-30 minutes every Friday making my grocery list
“Shopping” from my fridge/freezer/pantry each week
Picking out 5-6 dinners before the week even starts
Getting in 1-3 hours of meal prep a week
Overall having a PLAN!

Breakfast meal prep is almost always a part of my weekly meal prep because I never have time to think about what I want to eat in the morning (and if I don’t have something prepared, it ends up being not the best choice). These baked oats are so simple to prep and I’ve been loving them as a cozy breakfast after my morning workout!

When I’m feeling like I want to order takeout instead of cooking dinner, quick and easy sheet pan meals like this sheet pan gnocchi with pesto literally save me. At the end of the day, it’s going to be on my table in WAY less time than Uber Eats anyways. This one is perfect for meal prep — it was my meal prep this week actually!
