Happy Friday! This week I’ve been cooking up a storm—my inspiration honestly goes in waves so I try to take advantage when I can so that has meant tonsss of recipe testing this week. I’m experimenting with some new flavors and also had a chance to re-make some of my favorite old recipes from the blog to give them a little refresh.

The recipe I’m sharing with you today has actually been on my mind for a while. First because I’ve gotten quite a few requests from you all to share some recipes with red meat (which I do eat, I just tend to include chicken or turkey in most of my recipes) and second because the idea of a saucy, creamy dish with mini meatballs just sounded very appealing to me. It’s definitely giving a similar vibe to my lemon basil turkey meatballs with creamy rice recipe, which I know so many of you love.

I love making comforting meals that taste amazing but also nourish you and this recipe feels like a perfect example. The primary components you’re going to need are:

  • Ground beef (substitution options are below)

  • Shallot & garlic

  • Orzo—I have a few different GF recs for you below

  • Cherry tomatoes & tomato paste

  • Chicken or veggie broth

  • Coconut milk, duh

  • Fresh basil leaves

  • Parmesan cheese or nutritional yeast

This one is, IMO, wonderful for a Friday or Saturday night dinner in 💘
