even better as leftovers meal plan
easy-to-prep dinners that are even better the next day, with grocery list!
Some meals are best eaten fresh, right from the oven, pot, or skillet. But others can get even better the next day, developing more flavor as they hang out in the fridge overnight. This week’s dinner plan is all about those recipes—the ones that get more flavorful after a little bit of time, and therefore make for the BEST leftovers. We’re using ingredients and bases that soak up all the spices, sauces, and seasonings so by the time you reheat them, they taste even bolder than when you made them.
Think creamy pastas that thicken just right, noodle dishes that soak up every drop of sauce, and soups that only get deeper and richer with time. We’re even making the most of leftover broth this week—use it to cook up a quick batch of rice or quinoa for a super flavorful side later in the week 👏 And don’t get me wrong… every one of these is great the night you make it—but if you’ve got leftovers, you’re in for a treat.
Keep scrolling for this week’s dinner plan, the grocery list to follow so you can get everything you need, swap and sub options for each meal, and all my tips for saving time, energy, and money. And scroll to the end for this week’s breakfast and lunch meal prep plan to go along with it! Got questions? Just leave me a comment!
