Happy Friday and happy monthly meal prep plan day! Summer is such a fun month for cooking—there’s beautiful fresh produce in grocery stores and at weekly farmer’s markets and farm stands all making your weekly meals taste that much better. It also makes eating looks of fresh produce easier! With that in mind, this month’s meal prep plan incorporates loads of produce into weekly breakfast and lunches, delivering on both flavor and nutrients.
And with busy summers we have to keep time and flexibility top of mind as well. I know your weeks may look different than the other months of the year with vacations, weddings, camp, moving…all the things! Every single week of this month’s plan has at least one full recipe heading to the freezer to help stretch those meals for the entire month AND to save your sanity when you’re greeted by an empty fridge after a week away. Plus, I added no-bake, low-prep-time options as much as possible each week.
My meal prep plans are designed to require as little thinking as possible from you each week. Follow the grocery lists provided, prep 2-4 simple recipes just one day a week, and have breakfast and lunch done for the entire month. Use the included freezing guide to tell you how to store your prep, then just follow the calendar that tells you what to eat each day. Decision fatigue gone!!! 👏
