Happy (almost) June, my friends! Can you believe we’re already here?! A new month means one thing: it’s time for a brand new meal prep plan. I’m so excited about what we’re cooking in June—colorful, fiber-packed meals with low active prep and cook times—all geared towards making you think less and spend less time in the kitchen.
With summer around the corner, the June prep plan is the perfect way to manage changing schedules while still ensuring you’re getting nutritious meals in each day. Week one kicks off with some freezable prep staples like breakfast biscuits and slow-cooker protein prep, plus two summery stars: PB&J Overnight Oats (14+ grams of fiber per serving!!) and a Mango, Corn, Black Bean Salad (a scoopable salad situation). Both have been top hits in my house, and I can’t wait for you to try everything!
The prep plans are designed to make breakfast and lunch for one person for the entire month by dedicating a couple of hours once a week to your prep. Scale up the lists and recipe measurements as needed to fit your needs: 2x for two people, 3x for three, and so on! All recipes are gluten-free and include swaps to suit your needs. Need more swaps?
