Happy May, my friends! I say it every month, but April truly went by in a flash. I can’t believe it’s monthly prep plan day once again! We’ve got some new recipes to dive into!

This month’s plan is genuinely one of my favorites I’ve put together—week one includes a new recipe for Birthday Cake Overnight Oats, if that’s any indication of just how fun this month's recipes are!! Each week includes colorful, plant-forward, freezer-friendly meals that will get you in and out of the kitchen in less than 2 hours.

The prep plan is designed to make breakfast and lunch for one person for the entire month. Scale up the lists and recipe measurements as needed to fit your needs: 2x for two people, 3x for three, and so on! All recipes are gluten-free and include swaps.
