Hello and happy Friday everyone! Reporting to you from Austin, TX where I’ve been hanging for the last few days (and loving… I’m obsessed with Austin 🤠). I can’t even believe I’m saying happy May, but happy May!!!

With a new month, it’s time for a brand new 4-week breakfast and lunch meal prep calendar that you can follow to cover your breakfast and lunch prep for the month. This one is packed with easy chopped salads, a mix of new breakfast recipes, and plenty of summer-ready ideas to keep things simple as the days get busier. With trips and long weekends ahead, this plan is designed to take the stress out of figuring out what to eat—or to help you stock your freezer! Your future self will be very grateful to have meals ready to go AND that it didn’t take a ton of time to do so.

With just one dedicated prep day each week where you’re guided through 3-4 recipes to make ahead, you’ll have breakfasts and lunches ready to go for the entire month (and beyond, thanks to our freezing guide!). A calendar and storage guide for the month is included so you can easily follow along and see what to prep, what to refrigerate or freeze, and what to reheat each day!

Just like last time, following the plan (including the freezing/storing instructions) will leave you with breakfast and lunch for the entire month! If you’re cooking for 2, 3, 4, or more multiply the prep as needed. You also have access to our archive of meal plans (grocery lists included) if you want to add one on each week for dinners! Do what works best for you and your schedule and you can expect our usual dinner plans going out on Fridays throughout the month too.

Here’s the plan:

  • Spend one prep day a week making breakfast and lunch recipes.

  • Use the Freezing Guide to extend them through weekends or the next week.

  • Follow the Meal Prep Calendar to eliminate guesswork & reduce decision fatigue.

This week’s newsletter includes everything you need for week 1—a complete grocery list, recipe rundown, and freezing guide.
