This is a recipe idea that’s been in the back of my brain forever. It combines some of my favorite elements—crisp chicken thighs, creamy rice, and smokey spices—with ingredients I love in summer like corn, lime, and cilantro. I figured today would be a perfect day to share it because it’s truly one of my favorites so far! If you’re already a fan of my lemony chicken thighs and rice, garlic & sage chicken thighs and rice, or spinach & artichoke chicken and rice, you’re going to love this unique variation. She’s savory, a little spicy, a little smoky, and ridiculously easy to throw together. Plus, this is a gluten-free recipe that’s easily made dairy-free by adjusting your garnish choice. I call it street corn inspired because it has that same kind of creamy corn, bright citrus, and cotija topping that we all love on street corn. Now you can have it for dinner!
