Happy Friday! It’s day three of my done in 30 series featuring recipes that come together in 30 minutes or less but don’t sacrifice flavor or nutrition because we may not have time, but we do have goood taste!!

Today’s recipe is a quick, nutritious, savory meal: peanut-ginger chicken lettuce wraps. We had a taste of spring earlier this week in New England, and these wraps feel exactly like the kind of dinner you want when the weather starts hinting at warmer days. The chicken is tossed in a creamy peanut-ginger sauce, piled into crisp lettuce cups, and topped with crunchy peanuts and fresh herbs. It’s a delicious, protein and plant-packed meal ready in just half an hour!💥

  • They’re all about texture. Crunchy lettuce, crisp veggies, tender chicken, and chopped peanuts on top for a finishing touch.

  • They’re incredibly easy to prep. Cook the chicken, slice a few veggies, and dinner is ready. Leftovers are even easier.

  • They sneak in extra veggies. The lettuce cups, carrots, cucumber, and herbs all count towards your daily plant count!

  • And if lettuce wraps aren’t your thing? The peanut-ginger chicken is just as good served over rice or noodles. Make it a bowl!
