prep guide: we have sweetgreen at home!

There’s nothing I love more than a good recipe remake. Making my favorites at home without spending $$ on takeout or needing to go pick it up? A dream. So, this week I have a new prep guide for you to make your own sweetgreen-inspired miso glazed salmon bowls at home. These salmon bowls are a consistent favorite of mine—especially the spicy cashew dressing—and dare I say I like my version EVEN better? Plus, if you don’t have a sweetgreen location near you, now you have it at home!

Today’s newsletter will walk you through how to shop for and prepare these four simple components for your homemade bowls:

  • Miso Glazed Salmon Bites — because bites are better than a filet in a bowl

  • Hidden Veggie Lime Rice — secret veggies to boost nutrients 🤫

  • Pickled Onions — the easiest & prettiest topping

  • Spicy Cashew Dressing — the star of the show ⭐️

We love a choose your own adventure recipe over here, so you can choose whether you look at this like an ingredient prep situation with four prepped components to store in the fridge, or make it all at once to enjoy immediately. If you want to prep ahead for a week of lunches, check out the swaps and subs section for longer lasting protein suggestions 😊 I know salmon’s not for everyone, so we have options for ya!

PLUS I’ve included a step-by-step prep schedule to make the most of your time in the kitchen. Be sure to let me know what recipe remake you want to see in the next!

Before we get into the prep guide and logistics, I want to give that spicy cashew dressing a moment. I did my research for this one, because I know a salad or bowl is often a vessel for a yummy salad dressing. So to get it just right I snooped on the info available from sweetgreen’s website to build what I’m claiming as pretty darn close to the real deal!! You’ll want to have that recipe for all kinds of drizzling and marinating.
