If there’s one thing I love more than a one-pot meal, it’s a one-pot meal with fall flavors. One-pot meals are such a time saver, if you’re looking for a new meal to try this week, add these ingredient to your grocery list!! Because it’s one-pot, this dish comes together quickly and is perfect to prep for dinners or work lunches. We’re packing it all in too—veggies, protein, carbs, and of course we can’t forget about the goat cheese (optional for DF friends!) You can easily swap the sweet potato for some butternut squash, or the kale for spinach, truly whatever you have on hand will work here :) Because we love a customizable recipe!!
one pot quinoa with sweet potato, kale, and chicken sausage
Ingredients:
2 tbsp olive or avocado oil
12 oz pre-cooked chicken sausage
2 cups peeled sweet potatoes
3 garlic cloves
1 tsp smoked paprika
1 tsp dried thyme
1 tsp kosher salt
1/2 tsp black pepper
1 cup dry quinoa
3-4 cups low-sodium broth (I used all 4)
3 packed cups shredded kale
4 oz crumbled goat cheese (optional)

Made this recipe this evening - SO delicious, easy to make and perfect for fall. I’m allergic to chicken so I subbed out the chicken sausage for hot kielbasa and the spice added to the flavor!
