weeknight honey-garlic turkey skillet
serves 4 | prep time: 15 minutes | cook time: 35 minutes
Gluten-free, dairy-free, nut-free
INGREDIENTS
2 tablespoons olive oil
1 pound 93% lean ground turkey
12 ounces green beans, ends trimmed
6 ounces preshredded carrots, or 4 large carrots, cut into thin matchsticks (about 2 cups)
4 garlic cloves, minced
1½ tablespoons minced peeled fresh ginger (or 1½ teaspoons ground ginger)
Kosher salt
1/2 cup coconut aminos (or reduced-sodium tamari or reduced-sodium soy sauce)
1/4 cup raw honey
1 tablespoon sriracha (optional)
Chopped fresh cilantro
Thinly sliced green onions
Sesame seeds
INSTRUCTIONS
Heat the oil in a large lidded skillet over medium heat until shimmering. Add the ground turkey and cook, stirring often to break up large chunks, until no pink remains, 4 to 6 minutes.
Stir in the green beans and carrots, cover, and steam the vegetables until softened, about 5 minutes, stirring halfway through to prevent sticking.
Uncover and increase the heat to medium-high. Continue to cook, stirring often, until the turkey and vegetables are lightly browned, 2 to 3 minutes more.
Reduce the heat to medium, stir in the garlic, ginger, a pinch of salt, and cook until soft and fragrant, 1 to 2 minutes. Stir in the coconut aminos, honey, and sriracha (if using) and cook until the sauce is slightly reduced, 3 to 4 more minutes.
Serve the turkey and vegetables on plates or in bowls. Garnish with cilantro, green onions, and sesame seeds.
Store it: Refrigerate in a sealed container for up to 4 days or freeze for up to 3 months.
Reheat it: From the refrigerator, microwave until warm, 1 to 2 minutes. From the freezer, thaw in the refrigerator overnight, then microwave in 30-second increments until warm. Alternatively, reheat in a skillet over medium heat until warm.
Swaps & Subs:
Turkey: Swap for ground pork, chicken, or beef. You can also use diced chicken breast or thighs, up the cook time in Step 1 to about 10 minutes, until the chicken reaches an internal temperature of 165ºF.
Vegetarian: Swap for cubed extra-firm tofu, or use grated tofu.
Green beans: Swap for sliced red bell peppers.
Carrot: Swap for sliced yellow onion.
