You probably know this by now, but there’s nothing I love more than empowering you to cook a recipe you never thought you’d make. Something that sounds intimidating but is actually simpler than you think! My favorite messages I get are the ones that say a recipe of mine made you feel like a chef and built up your kitchen confidence, so today’s recipe is here to do just that. My slow braised pot toast with garlic parmesan risotto is deep, flavorful, and unique, but I’m going to teach you how to make it like a pro, no stress. And of course, I’ve got the grocery list and prep plan for you too.

This week’s recipe is a little bit fancier in case you want to bookmark it for your valentine’s or galentine’s meal next week. It takes a little more time to prep and cook but it’s one of those meals that makes you feel like a true chef once you taste, and see, the final product. It’s also a great dish to make for a crowd or dinner party—impress your guests with the fancy vibes!!

We’re using boneless chuck roast which is one of the more budget-friendly cuts of beef and is ideal for that fall-apart tender bite. What makes a pot roast great is braising—a cooking technique that first sears the meat with high heat then cooks (in liquid) for a long time at a lower heat. It results in a caramelized melt-in-your-mouth bite and a deeply rich flavor. And if you’re looking to use your slow cooker, I have a note on how to!
