Happy Friday my friends! When we’re talking pumpkin, I’m usually one to go right for the savory stuff (although sweet stuff definitely does have its place) and that inspired today’s new bonus recipe. It’s a warm and cozy, fall-inspired dinner that you can set and forget for busy weeknights and freeze for leftovers later: Slow Cooker Pumpkin Chicken Curry. This recipe pulls in creamy, punchy flavors that create a cozy dish with minimal prep time and zero active cook time since we’re using a slow cooker, but if you don’t have or don’t want to use one, I’ve got stovetop instructions for you too.

The richness comes from light coconut milk and pumpkin puree, and red curry paste and fresh grated ginger give the classic kick that’s totally customizable to your liking. It’s truly one of those meals that tastes like it should take more work than it does—in other words… easy but fancy! And gluten and dairy free 😉

As always I love to turn your feedback and ideas into reality, especially in the name of saving time and energy. This month I’m trialing a new addition to meal plans—a prep day guide! These guides were introduced last month in the meal prep plans and I’m excited to bring the same resource to our dinner plans. This week’s prep guide walks you through making two full meals start to finish, partially prepping one, and there’s an option to get ahead on veggie prep for recipes at the end of the week.

✨ To give this addition a fair shot there will be two bonus recipes + dinner plans this month (yay!!), one today and another in two weeks. The second dinner plan will replace the usual monthly ingredient prep guide, giving you the prep day guide again to get ahead for the week of dinners instead. At the end of the month I’ll send out a poll to get your thoughts and see what you prefer: prep day guides for the week (for 5 recipes), ingredient prep plans for the week (for 3 recipes), or a mix of both.

If you make dinners nightly just follow the meal plan as is—each week the meals are intentionally laid out so you have some lower lift ones happening at the midweek mark, and something fun on Friday when you may have a little more time to cook! Now let’s get into it!
