I’ve always tried to include veggies in my diet wherever I can—if more than 50% of my plate can be plants, I’m happy! Even though I’m a true veggie lover, sometimes this involves adding “hidden” veggies into recipes that don’t normally have them. This helps add some extra nutrients and fiber to every meal without compromising taste, especially since you can be strategic and make them indistinguishable. Whether you love veggies or not, hiding some extra ones in your dishes will help pack in an extra 2-3 servings of veggies into meals you’re already eating.
You’ve definitely seen me employ this strategy before. My hidden veggie spaghetti blends onions, celery, and tomatoes into a delicious sauce to pour on top of your favorite pasta. My hidden veggie chicken meatballs incorporate shredded carrots and zucchini into delicious and flavorful meatballs. And my hidden veggie turkey meatloaf also incorporates shredded carrots and veggies into a hearty meatloaf with a delicious glaze on top. All of these are delicious, cozy meals I love! chicken & cauliflower enchiladas
One of my favorite dinner recipes! These chicken and cauliflower enchiladas are seriously so good, I think I could have them for dinner every single night. I use almond flour tortillas, and stuff them with a cauliflower rice and shredded chicken mix, then top everything with lots of enchilada sauce and cheese. It’s a really fun recipe to make for friends or family that everyone will love. Even better, these enchiladas are super easy to make and finish cooking in the oven in 15 minutes!
one-pot chicken sausage, spinach, and rice
I LOVE a good one-pot meal. Less clean-up and fewer dishes are, of course, great, but I also love how all the flavors in a one-pot meal blend together as you cook them. This particular one-pot dish is a new obsession I will be cooking on repeat. It is so simple and so tasty at the same time. The spices help to bring this dish up to the next level, and the lemon gives it a nice bright finish. I know you’re going to love it too!
green veggie lemony orzo salad
I’ve been looking for an excuse to make an orzo salad for a few weeks now, and thankfully Easter is giving me just such an occasion. And since spring is just around the corner, I’m leaning heavily into bright citrusy flavors while still trying to get in as many veggies as I possibly can. This recipe is delicious and will certainly be a crowd-pleaser at family holidays and barbeques this spring and summer.

I just made the one pot chicken sausage, and prepped my lemon zesty chia/oatmeal while it was cooking. I feel like a chef 😀😀
The one pot chicken sausage spinach and rice was amazing! So delicious and easy! (Which is true if it comes from me, believe me- I’ve messed up on some of the other recipes!) And when I brought some for lunch my coworkers were eyeing it and saying mmm that looks good! And it was!!!
