I’m so excited for today’s new, fresh, and seasonal dinner recipe! I finalized it last month and have been not-so-patiently waiting for the moment when it actually felt like spring to share it, and friends, we are officially there!!
Spring Risotto with Lemony Salmon Bites is this week’s feature recipe in our dinner plan. What I love most about it is that you’ll learn to make three simple components that come together to create a delicious, accidentally fancy meal… BUT at the same time, you’re going to learn recipe techniques that can be carried over to other recipes or allow you to take what you need and leave the rest.
It’s really two easy recipes in one: the lemony salmon bites and the risotto are each incredible on their own, which means you can mix, match, and adapt based on your week. Make the salmon bites and throw them over a salad, grain bowl, or roasted vegetables. Make the risotto and pair it with chicken, chickpeas, shrimp, or whatever protein you’ve got. Or go all in and make the full thing for a dinner that genuinely feels like a restaurant plate, in ~30 minutes total. The crispy lemony breadcrumbs on top just take it to the next level!
