Happy Friday, my friends! We’ve continued to have hot, humid days here in Boston this week, and other than wanting to be very close to the AC, I’ve wanted all the crispy, crunchy summer produce. Easier to do when there’s not a parasite going around, right?

With that in mind, this week’s plan is what I’m calling my “summer cravings” meal plan: all the delicious summer produce, but with a bias towards roasting, slow cooking, and sauteeing for those of you who want to avoid the raw veg. Each meal—from carnitas tacos to one-pot pasta—is delicious, cozy (but in a summery way), and doable for weeknights. Follow along and stop the dinnertime decision fatigue!

We’ve got a combo of one-pot, sheet-pan, and slow-cooker situations going on, so prep is still easy, and we’re making the most of summer flavors.

BTW—If you’re following the July breakfast and lunch prep plan, we’re using some halves of cans this week (sun-dried tomatoes and pesto), so be sure to save them so you don’t have to double buy! More time, money, and energy-saving suggestions are at the bottom of today’s post, as always.
