Happy Friday! I’ve been absolutely loving playing with all of the beautiful summer produce in season right now—can you tell??? We signed up for a CSA farm share that we’re getting every week now through the fall and I’m SO excited about that! I’ll definitely share everything we get each week and what I plan on making. First pick-up is next week!

On a recent farmer’s market trip I was feeling inspired by summer produce and grabbed some of my personal faves—cherry tomatoes, radishes, and corn—and then created this summer skirt steak salad with the most delicious cilantro lime vinaigrette. It’s bright, it’s crunchy, it’s buttery, and in my opinion it’s the BEST summer salad. Enjoy it poolside, on a patio, or at a dinner party as a refreshing meal with minimal work required.

If you’re not into steak or don’t eat meat, I’ve got a few substitution options below. If you do like steak but you’re not usually one to cook it, skirt steak is a great way to intro yourself into cooking steak. It’s very simple to prepare, cooks quickly, and honestly is hard to mess up! It’s one of my favorites because it’s so quick and easy.

The primary components you’re going to need are:

  • Skirt steak (substitution options are below)

  • Cherry tomatoes

  • Corn

  • Radishes

  • Butterhead lettuce

  • Cilantro

  • Lime

  • Green onion
