Happy Friday!! I know a dinner plan for next week may be the last thing on your mind the day before a long weekend, so think of this as your gift for Monday night when the week ahead suddenly feels very real. And if you’re looking for cookout inspiration this weekend, we’ve rounded up some crowd-pleasers for that too!

In the spirit of the unofficial kickoff to summer (it’s 60 degrees and raining in Boston, naturally), this week’s plan leans into seasonal produce and the new season. When summer hits, I want to spend as much time outside as possible, which calls for recipes with quick prep times and components I can make ahead. That’s why I love this week’s component-based prep day plan. If you like prepping a few individual parts of your meals—like dressings, sauces, and bulk proteins—instead of full meals, this week will be a treat. Bonus points for enjoying this week’s meals outside!!

Dinner 1: Sesame Edamame Chili Crunch Salad

💡Goood to know: Add a second source of protein like roasted salmon or shrimp if you want to bulk it up! Rotisserie chicken or a can of chickpeas make great additions too.

Swaps and Subs

  • Ginger root: Swap for ¼ teaspoon ground ginger.

  • Cabbage: Swap for finely chopped shredded curly kale. You can replace all or half of the salad base with kale.

  • Red bell pepper: Swap for a green, yellow, or orange bell pepper. Swap for roughly chopped sugar snap peas.

  • Chili crunch: Swap for additional olive oil in the dressing.

  • Edamame: Swap for roughly chopped sugar snap peas.
