To put it mildly, this has been a crazy week! I was asked to appear on Good Morning America to share my latest highly requested budget grocery series. This time, I took a $50 grocery haul from Trader Joe’s and turned it into five different recipes that each made four servings.

The Grocery List
For this series, I went back to Trader Joe’s, but you can grab the list anywhere.
Produce:
1 large yellow onion
1 broccoli head
5 green bell peppers
6oz baby spinach
1 lb raw carrots
Canned/packaged:
28oz can crushed tomatoes (I use fire roasted)
15oz can black beans
15oz can kidney beans
15oz can chickpeas
32oz basmati or jasmine rice
16oz gluten-free pasta of choice
32oz veggie or chicken broth
15oz can artichoke hearts
1 lb raw cashews or cashew pieces
4oz nutritional yeast
Meats/other proteins:
1 lb ground turkey (can sub plant-based crumbles or vegan sausage)
1 + 1/2 lbs boneless chicken thighs (can sub for an additional tofu block)
14oz firm tofu block
Pantry staples you’ll use
olive oil
coconut aminos, soy sauce, or tamari
maple syrup
sriracha
lemon juice
tapioca, arrowroot, or corn starch
Spices you’ll use
salt & black pepper
garlic powder
chili powder
smoked paprika
ground cumin
dried oregano
ground ginger
sesame seeds (optional)
red pepper flakes (optional)

Also made the chicken artichoke rice dish. My husband doesn’t eat nuts- can you recommend a substitute for the cashew milk? I also found that the rice part of it was a little bland. Maybe add more salt or more nooch?
I made the bean chili- yum! I used pinto beans I/o kidney beans because I had them, also added a small can of mild green chilis
