I’m writing today’s newsletter while riding on the train from Boston to New York City and simultaneously receiving an answer to the question “will I get motion sickness on trains too?” — spoiler alert: the answer is yes so I’m on the struggle bus (or struggle train I guess…) right now. But it’s worth it because I’m excited to get to NYC and find some inspiration from the diverse food scene which always amazes me.
I have another grocery list + meal plan for you to use this week which features a spread of all different recipe types, but overall keeps us on our plant-forward comfort food kick. If you see a couple of summer veggies on the grocery list just know it’s because I’m trying to manifest Punxsutawney Phil’s prediction of an early spring and therefore… earlier summer?
