The pasta bake calls for cottage cheese. The brand I wanted was out of stock and the brand they had I've never gotten it home, had it in the fridge a few days and before the expiration date it's still moldy. So I didn't have cottage cheese and got some silken tofu instead. It worked out great! I also was able to use fresh basil and oregano from the garden. Both my 4 and 2 year old ate it well. I think it will become a future family staple.

This feels like a dumb question but I only see baby golden Yukon potatoes at my store(Not a Trader Joe’s)-Do we know about how many cups two large Yukon gold potatoes yields or is there some other way to figure out the equivalent yield?

not a dumb question!! I'd just double the amount of small potatoes, so grab 4!

Two large Yukon gold potatoes are about 1 to 1.5 pounds in weight, so you could go off of that if possible, you'll want about 3 cups of diced potatoes for the sheet pan, but it's totally fine if you have a little more or less for the sheet pan, it's flexible!

Headed to get these item at my local Trader Joe’s on the West Coast. Can I make these meals dairy free? Half of the family is congested with a summer flu. Yay for back to school germ sharing *sarcasm*

Hi Ashley! Each recipe includes dairy-free swaps in the notes! For the dump and bake pasta, you can use dairy-free ricotta cheese in place of cottage cheese and dairy-free shredded cheese (or make this one and freeze it for when everyone's recovered!!).

I did your saucy kale,chicken, and chickpea recipe and it was amazing. A super easy one pan meal and a lot of leftovers. I did add some orzo to the meal!

Hi Shay! I recommend using a macro counter, like Samsung Food, it's free! You can pop in the links right from my website and it calculates the macros for you.

Do you have a vegetarian membership plan?

Hi Haven! I do not have a separate membership for vegetarians as not all my recipes are vegetarian. Swaps are included for many recipes though!
