My budget grocery series, where I take a single grocery haul and turn it into five healthy dinner recipes, is one of my favorite things I get to do. Each time I create a new list and recipes, I have to push myself creatively and be strategic while still developing meals that check all the usual boxes: ✅ veggie-packed, ✅ protein-packed, ✅ gluten-free, ✅ dairy-free, and of course… ✅ delicious! Well this week, I’m back and giving you a brand new list, recipes, and all of the tools to do it at home.
I’m extra excited for this one, because this is the 10th edition of my series! I started it back in January 2023, knowing that the conversation around nourishing food could not be had without addressing sharply rising grocery costs. I saw plenty of recipes being shared on social media, but not a lot being said about how much of a challenge it is to actually get those recipes on the table—whether it’s due to lack of budget, lack of time, or lack of accessibility. Since then I’ve developed 9 budget-friendly lists:
January 2023 — Turning a $75 grocery list into 10 meals
March 2023 — Turning a $50 grocery list into 10 meals
May 2023 — Turning a $50 grocery list into 20 meals
July 2023 — Turning a $60 grocery list into 20 meals
October 2023 — Turning a $55 grocery list into 20 meals
November 2023 — Turning a $55 grocery list into 20 meals
February 2024 — Turning a $60 grocery list into 20 meals
March 2024 — Turning a $50 grocery list into 20 meals
May 2024 — Turning a $50 grocery list into 20 meals
And this series is what encouraged me to start this newsletter in the first place! At the end of the day, I want to give you the tools to make getting healthy dinners on the table a little bit easier. I try to focus on the following to make that happen:
🥬 Picking out cheaper cuts of protein & types of produce
🍚 Prioritizing simple ingredients that can be used in different ways
🌿 Getting a variety of fresh herbs to bring elevated flavors
🍆 Using plant-based protein options in unique ways
🍴 Going homemade when it comes to sauces, marinades, or seasoning mixes
🍅 Utilizing the same pantry staples like oils, vinegars, sweeteners, spices, etc.
I always have so much fun making these lists and turning them into delicious and nutritious recipes. To make the resources even more complete, I started making long-form videos for each one over on YouTube. So you can expect that to come starting on Sunday! Now this week is all about getting ready for back-to-school time (whether you actually go to school or not) and getting organized for a fresh start. I really do try to take your feedback every single time I do this series, so you’ll notice this edition includes no tofu, no tempeh, and no nuts. It’s also very easy to make 100% plant-based (see below).
