Another Sunday, another meal prep day! If youāre still wondering what you can make today, how about a super simple 30-minute sheet pan meal? My harvest sheet pan gnocchi with crispy kale is a true dump and bake recipeātoss everything onto your sheet pan, bake for less than 30 minutes, and you have lunches or dinner prepped. Itās cozy and comforting but still nourishing and veggie packed!

harvest sheet pan gnocchi with crispy kale
Ingredients:
12oz pre-cooked sausage of choice (I used apple chicken sausage)
12oz frozen gnocchi (I used TJās frozen cauliflower gnocchi)
2 cups butternut squash, cubed
2 cups shredded kale (about 2oz)
3 tbsp olive oil
2 tsp dried rosemary
1 tsp garlic powder
1 tsp kosher salt
1 tsp dried thyme
1/2 tsp black pepper
1/2 tsp smoked paprika
1/3 cup grated parmesan cheese or nutritional yeast, for topping

Over the last few weeks with Cashew, Iāve been leaning on all of the dog toys, treats, games, and other distractions to keep her and Copley busy š I really donāt keep a ton of dog stuff around my apartment but I want to share what I do have and love!
Wild one toy set
They have the cutest leashes & harnesses (the colors are the best) but Cash and Copley LOVE their toys from here. Cashew is in her āØteething eraāØ and this chew toy set is perfect for her. Itās minimizing the amount of bites on me as much as possible..
Max Bone sling carrier
I originally bought this sling to carry Copley when she gets tired of walking and I canāt believe how much she loved it. Now Iāve been using it for Cashew too and I always get compliments on it. She falls right asleep in there so it must be comfy.
Lesure car seat & blanket
The best patterns, colors, and textures for all the comfy cozy dog essentials!! (ngl I wouldnāt mind some of it in people size). We have this car dog bed (which Copley loves at home too, not just in the car) and this green blanket that is one of my most requested items! Now Cashew fits right in there too. One other thing we have and loveāthis travel carrying caseāis on sale right now!
BedSure
One thing about me is that I cannot resist an aesthetic dog bed or blanket š. This dog bed from BedSure looks like it could be a fuzzy ottoman, but itās actually a super comfy dog bed! Perfect for my small dog people and aesthetically pleasing. This ramp is also a commonly requested link that fits into the apartment look!
Harnesses, Collars, & Leashes
Copley and Cashewās OOTD every day = these affordable Voyager harnesses, this white collar and this green collar, these adorable dog tags with their names on them, and their leashes: peaches and flowers. If you ask me, they look pretty cute!! In the winter youāll see them rocking their puffers or fuzzy jumpsuits.
Earth rated
Any dog owner knows this one is not glamorous or cute, but itās a must haveāš© bags. Weāve used these from Earth rated from the beginning, and theyāre the best. The material is thicker, which we love for quick and easy clean ups. Going to need to stock up on these now š and these are the cute dispensers we have.

Cashew + Copleyās fave lick mat recipe
A lick mat is my go-to for the dogs when they need extra enrichmentāand I need to get work done ā These lick mats keep C+C occupied for a solid 30 minutes š
Ingredients (per mat)
1/2 cup plain non-fat Greek yogurt
2 tbsp blueberries, slightly mashed
1/4 cup pumpkin puree
Instructions
Mix together all the ingredients in a small bowl, then spread on a lick mat and freeze for 2 hours before giving to your pup! š¶

I want to make the sheet pan gnocchi but my grocery store doesn't sell frozen gnocchi, just dry potato gnocchi in the pasta aisle! Do you think I could make it by cooking it per instructions first? Not sure how to modify or if it's possible. Love u Jenn!
