Happy Sunday and happy May!!! May has always been one of my favorite months—we finally get some consistent sun in Boston, everyone is outside enjoying nature, the flowers are blooming, and as a Taurus girlie it’s also my birth month 🥰
I spent this weekend in Charleston, SC so I got some easy access to the sun and now I’m headed back for a new week of testing recipes! As you all know by now, I love a nutritious dinner I can throw together in 30 minutes or less, so I’m sharing some inspo for you below. I also rounded up some of my travel essentials that I brought with me on my trip!

salmon lettuce wraps with mango salsa
I’m manifesting summer energy with these salmon lettuce wraps with mango salsa! It’s an easy nourishing dinner idea that comes together so quickly, and if you loved the one pan halibut with mango salsa recipe from a few weeks ago you’ll love this one too! You can use your air fryer or oven to make these in less than 30 minutes.
