I hope everyone is enjoying their holiday weekend!☀️ Summer is officially in full swing, which means the season of pasta salad is upon us. We recently survived a heat wave in Boston and I swear we made it through on pasta salad alone. It’s hard to think of anything worse than turning on an oven on a 100-degree day, so pasta salads truly have saved me in the kitchen. They are the ultimate bang for your buck packing in protein, veggies, and all the flavor, plus they’re perfect for meal preps, on-the-go lunches at the beach, or as a crowd-pleasing side dish for a summer party.
The versatility of pasta salads is truly what makes them a star—whether it’s gluten-free, dairy-free, or plant-based, there’s a pasta salad for you. I’m gonna try those next time! I went ahead and just made your traditional meatballs without the sauce and they are also delicious.
Im making the orzo salad tonight. I saw you recommended topping them with your lamb meatballs but I don’t see that recipe on your website. Maybe it was something else and I misheard the video? I’ve got to add meat or hubby will stomp his feet.
