This time of year, I’m all about comfort foods—the kind that warm you up from the inside out. But let’s be honest: veggies, especially those ✨green ones✨ don’t exactly scream “comfort” in their typical state. And even as someone who LOVES eating veggies, sometimes I find myself needing to sneak them in by blending or grating them into different meals. So, this week’s meal plan is all about sneaking in those hidden veggies. Your meals will be as nourishing as they are comforting!
On the menu this week we have five meals that are the perfect intersection of comfort and nourishment. If you’re not craving veggies right now, I promise you won’t even know they’re in there. (This meal plan is also great if your partner or kids struggle to get in their veggies!!) And if you’re still following along with the January Prep Plan, these meals are perfect dinners to compliment your breakfast and lunches.
