Happy Friday!! I’m continuing to get requests for no-bake recipes, and I hear ya!! It’s been so hot outside lately, and although Copley is absolutely loving her sunbathing time, I’m not loving having my oven on when not necessary.

Given all of that, this week I decided to share a meal prep plan that requires NO oven, stovetop, air fryer, microwave, or any other ✨hot kitchen tool✨ for a summer prep! You’ll get the grocery list and instructions for 1 breakfast, 2 lunches, and 1 dessert to prep for the week—each recipe is simple, gluten-free, and makes 4 servings.

If you want to follow along, I’ve included a grocery list for everything you’ll need!

My primary goal in developing these new recipes was to show you that you don’t actually need to use the oven to make delicious food! We’re making simple sauces, we’re calling on plant-based proteins, and we’re using lots of fresh veggies, of course. Having your meals prepped and ready for you in the fridge ahead of the holiday weekend will be life changing! And if you wanna add some dinners in, feel free to use any of my past meal plans with grocery lists from this post.

Stay tuned for a full video that I’m going to post on YouTube Sunday morning walking through all of the steps—so if you wanna cook along with me you’ve got early access to the grocery list and all recipes! Make sure you’re subscribed so you’re notified when the video’s up!

Today’s newsletter will walk you through how to prepare these recipes:

  • Key lime chia pudding

  • No-bake buffalo chickpea lettuce wraps

  • Crunchy peanut carrot salad with date peanut sauce

  • 4-ingredient crunchy peanut freezer fudge

I’ve got some substitution options below, and if you have any substitution questions just ask me in the comments 😊 Let’s get into it!
