Just made this, used coconut milk in place of the yogurt. Was delicious. I had to eye ball some of the portions since my chicken was like 1.25 lbs vs. 1.5 and it took a lot longer to cook down the chicken broth. Overall it tasted great and loved it.
This recipe is delicious!! I am a somewhat new subscriber and I just love your recipes. I am an avid home cook and it is always great to find new ideas. As a 53 year old woman, I do watch my nutritional intake. Could you possibly add nutritional information to your recipes? I now meal prep my breakfast and lunch and frequently have a Jen recipe for dinner. I am eating goood 3 times a day! It would be super helpful to know calories, fiber, calcium
Weird question but do you think subbing low fat cottage cheese for ricotta would work? Or do you think that would cause things to get funky? Hoping to try this one tonight!
This was a total flop for us! My husband cooks on weeknights and while
He was working through the recipe he asked why on earth he was putting yogurt under the broiler. It separated and the end result looked inedible and our son wouldn’t eat it. It tasted fine, but we won’t be trying this one again, especially for a weeknight meal. I see where it was supposed to go , and was excited about the spring flavors, but ultimately disappointing !
Hi Abbie! Ah I'm so sorry to hear that the recipe wasn't what you expected -- I tested this recipe a bunch (six times actually 🤣) to make sure to get it right and ultimately the combination of the the yogurt with the ricotta mixed together with the heat off was working consistently for me. Since the chicken is then placed on top and then the cheese, the couple of minutes in the broiler is just to melt the cheese and shouldn't result in separation when it's followed that way. Did you happen to switch any ingredients like the ricotta? Either way I'm sorry to hear it was a miss and I truly appreciate your feedback ❤️
This is incredible. I didn’t have ricotta on hand, so used cream cheese instead and it worked really well. Will definitely be making this frequently.
Yay!! So glad that worked and that you enjoyed the recipe ❤️

Just had this for dinner, amazing!
I'm so glad you liked it Lindsay!! 💕
This was SO good, my young kids even loved it and asked for seconds on the chicken. It was perfect and super fresh!

Just made this for dinner and it was delish! I had some asparagus from my garden, and this was *perfect* for a lovely springtime meal!
Obsessed with this lemon chicken!! I can’t wait to give it a try!
