Tips for someone who HATES beets? I've tried them every which way, including like a scant single frozen beet in a pineapple smoothie & all I taste is dirt. Is this just a veggie that's out for me?
I don’t tolerate dairy and just found out I’m allergic to coconut. What can I sub in your yummy recipes for the canned coconut milk? I’m disappointed I have to vary it but prefer feeling good after eating😍
it depends on the recipe, but typically oat milk works! there are also some lentil-based plant creamers (country crock has one) that are great and super thick!!
I’ll also say I love the Trader Joe’s soy milk. It only has two ingredients: soy and water and it is just over $2 which is a great deal. Not quite as creamy as the coconut milk but I just thicken with cornstarch slurry at the end if something needs to be thickened. I use it in my coffee and basically anywhere that milk is called for.

Did you peel the beets? A lot of the 'dirt taste' is in the skin. I think they are quite tasty without skin.
