On your live video, I’m the one that asked about the cream cheese (and the chia pudding, haha…I like asking questions 🤷🏼♀️ ). I was trying to manage my 4.5 yr old at the same time I was watching and missed the rough recipe you mentioned using the cream cheese, pesto, mozz, and chicken I think?
You don’t need to put together a whole recipe for me. Just rough measurements for either 2 or 4 servings (or even 1 and I’ll adjust)…whatever is easiest for you, would be amazing. Thank you SOO much! I’ve truly loved having your recipes to lean on (and everything else you share) knowing they’re flavorful and so healthy for my whole fam. You ROCK!!! 🤘🏻
I'm so glad you're liking it! thanks so much for joining the live and here is that recipe 😊 I'll get this up on substack at some point! 4-5 servings: preheat oven to 400 degrees. mix 8oz softened cream cheese, 3/4 cup pesto, 1/2 cup shredded mozzarella, and 1 teaspoon garlic powder in a mixing bowl. add 2 pounds boneless chicken breast to a casserole dish and cover with the cream cheese mixture. optionally, add some cherry tomatoes or roasted red peppers along the sides to add veggies. bake until the chicken is fully cooked and cream cheese mixture is bubbling, 33 to 42 minutes. let cool and serve! I like to serve over rice or cauliflower rice.
You’re the best! Sounds absolutely delicious! I’ll be giving it a go soon! I have those cute little multi colored peppers you were talking about that would probably be really good with all that! And I’m with you on the pesto board…can’t get enough. My mom made some homemade a couple years ago with homegrown basil from her garden (3 different kinds)…I would have eaten that off the ground if I had to! 😂
