Happy Friday! It’s time for the October bonus recipe and since you’ve been asking for more set-it-and-forget-it slow cooker meals, I have a new slow cooker meal for ya! If you’re a new subscriber, I send out bonus recipes here on Substack once a month and aim to develop recipes that are unique, seasonal, or give fun twists to traditional recipes. I really love making these recipes because I try to get creative, make recipes that aren’t always my first thought to develop, AND address your needs. One ask I’ve been getting a lot is vegetarian slow cooker meals, so today you’re getting a delish 10-veggie chili. BUT don’t worry I’ll give you options for adding in meat if you want to (and stovetop instructions if you don’t have a slow cooker).
Is a 10-veggie chili excessive? Honestly I don’t think so! I love packing in as many plants as possible into meals that are genuinely tasty and crave-able, so I knew it would be easy to get tons of veggies into this one. Generally chili is a great way to pack in plants (hello fiber!), and in this recipe we’re really leaning in with additional veggies like sweet potatoes, corn, and beans. The real stars of a good chili (in my opinion) are a good spice mix and plenty of seasoning, so if you want to customize and add/delete any vegetables, you absolutely can! Chili is also a dish close to my heart—one of the first recipes my mom taught me how to make when I was just a kid ❤️
The main components you are going to need are:
sweet potato
green bell pepper
yellow onion
sweet corn
crushed tomatoes
cannellini beans
chickpeas
