Happy unofficial start to summer!! I feel like MDW crept up on me this year but I am so ready for the season. I’m really trying to channel a slow girl summer this year to truly get the most out of the nice weather and longer days. Some things I’m looking forward to include weekend farmer’s market trips with Brian, daily walks around the river with the dogs, playing tennis, sitting by the pool, lots of family time, doing some New England day trips, and cooking with all of the beautiful produce summer has to offer, of course ☀️ I can’t wait to share it all with you—recipes, life, and beyond!

This week’s meal plan had to honor the (almost) change of seasons—it highlights dinners that get me excited for summer. You’ll see so much of this week’s list consists of produce items, because IMO summer is all about the fruit and veg!! If you’re going away for the holiday this weekend, save this one for when you’re back, download the grocery list, and you won’t have to think about what’s for din next week—honestly the best feeling after getting back from a trip, whether it’s a big vacation or a weekend away. You can even make a grocery order and set it to deliver when you’re ready!

Here’s the plan for this week:

  • Chicken and Cauliflower Enchiladas — I’m so excited for this one, always a fave

  • Vegan Cherry Tomato “Vodka” Sauce with Pasta — soo easy to throw together

  • Greek Chicken Burgers & Yogurt Herb Sauce — nothing says summer like a burger

  • Salmon Lettuce Wraps with Mango Salsa — if you make one, please make this one

  • Caprese White Bean Salad — actually takes 5 min to throw together…no bake!
