Corn chowder has always been one of my momâs favorite dishes to make, and itâs a recipe she taught me when I was very young, along with my favorite chili and Italian meatballs. I can still vividly remember standing in the kitchen on âstirring dutyâ while we added each component to the pot and simultaneously made the entire house smell like bacon and butter 𤣠Letâs just say the fire alarm did go off more than a few times...
I took those childhood memories and turned the recipe into my own versionâa summer corn chowder, featuring seasonal corn and zucchini, thatâs free of gluten, dairy, and meat. And before you even question the flavor of this chowder without those things, just know I have a very high standard for corn chowder and itâs now one of my favorites. The best part is, I didnât even need to go to my usual substitutes like coconut milk, ghee, or plant-based creamers. ALL of the creaminess in this soup comes right from beans. YES beans!! Your mind is going to be blown like mine was.
Per usual, I have substitution options below and can suggest any additional subs you need in the comments, so letâs get into it!
The primary components youâre going to need are:
Yellow onion
Celery
Sweet corn
Yukon gold potatoes
Garlic
Nutritional yeast
Veggie broth
Zucchini
Cannelini beans
Everything cooks up in about 30 minutes, so you can get a cozy but summery dinner on the table quickly! Not to mention, this really makes a lot of soupâso prepare for leftovers and get your freezer ready for a few mason jars of corny goodness đ˝
