a fall inspired dinner plan with PDF grocery list + a pumpkin spice smoothie!
This week I polled you all over on Instagram on whether you’re ready for fall or holding onto summer and the overwhelming majority of you said it’s TIME to get into fall!! 🍂 And not gonna lie, I was pretty excited to see that because I’m just itching to get into it over here… I’m feeling all things pumpkin, squash, apples, brussels sprouts, and more because fall produce, in my humble opinion, is truly the best. Boston weather has also gotten slightly cooler in the last few weeks so I gladly started my fall recipe testing a couple of weeks ago so I could have some good stuff ready for you.
I’m sharing my first NEW fall recipe this Sunday, so stay tuned for that!! I also included the recipe for my fave fall smoothie—my pumpkin spice smoothie—in today’s post as a bonus!
Don’t worry though, I’m not dropping any of the late summer produce that’s still ripe and delicious right now. My CSA this week had kale, peppers, tomatoes, radishes, and cantaloupe and I’m also planning on hitting the farmers market this weekend. It’s the perfect time to freeze any of your late summer goodies so you can enjoy them later on—make a big batch of pesto, a sauce with heirloom and cherry tomatoes, or maybe some summer corn chowder to freeze? Because by October we might wish we did 😅
Today I’m sharing a grocery list and meal plan that dips into those fall flavors and gives a little intro of what’s to come. Each recipe this week is gluten-free AND dairy-free and I have plant-based subs for those who need them. The meal plan will simplify your week and make your shopping efficient by:
Leaning into herbs and spices — We’ll use lots of fresh or dried herbs in order to maximize flavor and make each meal unique without requiring lots of ingredients.
Giving a hearty serving of produce — We’ll focus on fresh produce to bulk up the meals, provide nutrients, and make everything taste great. Some produce items will be used multiple times in different recipes to make them stretch.
Using versatile staples — You know I’m passionate about keeping the pantry stocked with basic staples, and we’ll utilize those staples to complete each meal.
