One of the best parts of summer cooking is that you don’t really have to do much if you don’t want to. The flavorful produce does a lot of the heavy lifting and corn is one of those ingredients that delivers big flavor without requiring much from you in return. Grill it, steam it, sauté it, or even eat it as is… sweet summer corn never misses.
This week’s round up is all about corn: fresh, sweet, and endlessly versatile. I’ve pulled together six recipes that make the most of it—whether it’s charred and tossed with steak in a hearty salad, stirred into a cozy (but still summer-friendly) corn chowder, or folded into easy sides for BBQs and backyard dinners. It’s corn! 🌽
And if you haven’t been charring your corn, this is your sign. It’s a quick way to add a little smokiness and depth, especially in simple salads or salsas. You can do it on the grill, in a skillet, or even under the broiler. And while most of these recipes call for fresh corn, which is available all over this time of year, canned or frozen works too!

The Round Up: seasonal summer corn recipes
Steak, Avocado, and Corn Kale Salad with Jalapeño Lime Dressing — The corn in this one adds the perfect pop of flavor and sweetness. Summer Elote Quinoa Salad — Sweetgreen may have put this one back on their summer menu, but I promise the at-home version is just as good and way better for meal prep! We’re packing in all the veggies here, and the corn helps balance the acidity.
Vegan Corn Chowder with Crispy Chickpeas — I love a summer soup moment and corn chowder is such a classic. We’re blending half the soup to give a creamy base but leaving room for texture with diced potatoes, corn (of course), and crispy chickpeas on top. Optionally top with sour cream or Greek yogurt.
Street Corn-Inspired Chicken and Rice Skillet — While this skillet has a few different components, the street corn has that same kind of creamy corn, bright citrus, and cotija topping that we all love on street corn. This might just be my favorite corn dish!!
Summer Corn Salad — If you’re feeling bored with the typical lettuce and veggies, you need to try this corn salad. Its sweet and rich flavors combined with a fresh, vinegar taste make it the perfect pairing for grilled chicken or fish… or even just eat it with a spoon like I do! As an added plus, this recipe is perfect for a last minute BBQ or party, and takes no more than 15 minutes to throw together.
Corn and Arugula Salad with Lime Vinaigrette — The perfect simple summer side salad! Pair this with any protein—grilled chicken, shrimp, or steak would be delish, or add white beans for vegetarian. I recently included this one in my $45 budget BBQ menu and loved it with the BBQ chicken skewers.
