Meatballs are one of my favorite ways to pack in protein and get dinner on the table in minimal time. Plus, ground meat is typically an affordable and accessible choice. In this week’s Round Up I’m sharing a handful of meatball recipes that go beyond your average spaghetti and meatballs (although there’s exactly zero things wrong with the classic). You’ll see I use a mix of ground meats—chicken, beef, and turkey—and you can feel free to use what you have on hand or prefer. Most of these are super flexible and just as delicious with a different protein. If you’re looking for other swaps and subs options, comments are open!
Some of these recipes have a few hidden veggies tucked in, because we’re always looking for ways to do more with less effort. Make a double a batch, freeze half, and thank your past self later when you don’t feel like cooking. So many ways to meatball!
