Just made the egg muffins and reviewed them -- and I am now your devoted fan for always! I've been down with a bad back for a few days and these were the perfect recuperation cook. I ate FOUR of them for combo breakfast and lunch (and I am so happy I did!). Thanks!

I made the soup and it was amazing! I blended it with my immersion blender because my toddler won’t eat veggies in chunks (🤷🏻‍♀️), and then actually liked his bowl better with that consistency so we did the whole pot. Kind of a Thai chicken chowder vibe that I was VERY into. Will be in the regular rotation!

Just meal prepped the Pesto Egg Muffins from this week! All of mine caved in the middle. Did I miss something??☹️ But they are still very yummy!

I do but it's up to you! If you like spicy then def include them! You can always add after you taste the soup too

I made the soup tonight! I split in half because it was only my husband and I eating it. I used 1.5 chipotles plus some of the oniony sauce from the can also. GREAT warming soup!
