I’m back this week with an all-new Budget Grocery Series!! For the 12th edition of the series I took a $55 grocery list and turned it into your week of easy, plant and protein-packed dinners. This series is what brought so many of you into this community and it truly is one of my favorite things to put together. As always, the recipes are produce-forward, packed with protein, and don’t feel like “budget meals” at all. My goal with the series is to bridge the gap between truly good, healthy food and accessibility. I dove a bit more into the “why” behind this series in Friday’s post if you want to read more!

We go over the entire grocery list, pantry staples, grocery shopping, the recipes, substitutions and swaps, and more! April Budget Grocery Series: The Grocery List
Produce
1 garlic bulb
2 lemons
3 limes
4 medium sweet potatoes
1 medium cauliflower head
1 pound whole carrots
12 ounces sugar snap peas
6-ounce bag baby spinach
1 cilantro bunch
1 green onion bunch (8-10 total)
16 ounces frozen peas
Canned/Packaged
15-ounces canned corn
13.5-ounce can full-fat coconut milk
16-ounce jar roasted red peppers
32-ounce container low-sodium vegetable broth (or low-sodium chicken broth)
Jasmine rice (3 cups dry total)
Proteins
2 pounds boneless, skinless chicken thighs
1 pound 85% lean ground beef
1 pound ground chicken
15-ounce can black beans
15-ounce can chickpeas
Pantry Staples
olive oil
toasted sesame oil
coconut aminos (or reduced-sodium tamari or reduced-sodium soy sauce)
rice vinegar
sriracha (optional)
tapioca flour (or arrowroot starch or cornstarch)
Spices
kosher salt & ground black pepper
smoked paprika

Can't believe how affordable this is! I just picked up the grocery list items from Trader Joe's in Chicago and it was only $40.72 (I already had lemons, black beans, chick peas, rice, and all pantry staples at home).
Hi Jen! I’m looking for the lemon pepper chicken recipe with the spinach and the peas and I can’t find it on here. I only see three meals now not five.
